Aperitivo hour: One-Ninety Bar

After a generous long lunch – and maybe a quick siesta – evening calls, with One-Ninety Bar at Four Seasons Hotel Singapore the perfect spot for a gentle, elegant change of pace. After a drink or two, head to Chinatown Complex Food Centre to be dazzled by 260 stalls showcasing Singapore's food culture, with wonton noodles, fragrant beef rendang, stunning seafood, laksa, oyster omelettes, and everything in between. While it can feel overwhelming at first, the best approach is to do a couple of reconnaissance laps, follow the queues and then dive in. Order multiple dishes, share everything and surprise yourself. The incredible variety on offer, the lively communal atmosphere and the chance to immerse yourself in Singapore's culinary heritage, one inexpensive, flavour-packed plastic plate at a time, is an indispensable local experience.

Late night: Makansutra Gluttons Bay

Round off the evening with charcoal-grilled beef or chicken satay sticks at Makansutra Gluttons Bay, perfectly positioned just feet from the track. The open-air dining area sits on Marina Bay and serves up panoramic views of Singapore's illuminated waterfront. Follow the smoke to the satay stalls where skewers of marinated meat are grilled over hot coals, ready to be drawn through a rich peanut sauce. On the side, cucumber adds coolness and crunch. Settle in, maybe add an ice-cold beer and watch the shimmering city lights at the end of a uniquely Singaporean day.
