The south: curries, seafood and Phuket

Southern Thai food is famed for its intense heat, tangy sourness and aromatic curry pastes. Seafood is especially important along the coast with fresh fish, prawns, crab and squid regularly appearing in dishes.

Southern curries are often much hotter than central Thai versions, using fresh and dried chillies generously. Phuket’s local food scene reflects its geographical location as a trading island, influenced by Chinese, Malay and other Southeast Asian cuisine.

Sweet endings: mango sticky rice

Mango sticky rice combines ripe, sweet mango with glutinous rice dressed in sweetened coconut milk. A touch of salt balances the overall dish and prevents it from becoming one-dimensionally sweet.

It’s often eaten during Thailand’s mango season, but it’s also available year-round in many places across the country, and can be garnished with toasted mung beans or sesame seeds.

How to order, and how to handle the chilli

Thai meals are approached communally where several dishes are ordered for the table instead of one main meal per person. Opt for a selection including a curry, stir-fry, salad, soup and grilled dish to taste the best of the menu.

Chilli levels vary enormously across dishes and many are aromatic without being intensely hot. Mai phet means ‘not spicy’ and phet nit noi means ‘a little spicy ’, so look out for these descriptors before ordering. Make sure you taste the food before adding extra chilli or fish sauce, as it will usually be balanced as intended.

If you’re looking to bring a taste of Thailand home after your visit, try your hand at making a classic satay sauce, perfect for dipping chicken skewers into for a light lunch.
